Here is an amazing soup! It is perfect with some toasted crusty garlic bread...remember that it is your soup so feel free to add, adjust and substitute as you wish!
Beef
‘n’ Bean Minestrone Soup
2lb Ground Beef
1 Onion, diced
1 Carrot, diced
1 Celery stalk diced
1 Small zucchini, diced
1 Tomatoes, diced (28 oz can)
1 Potato, peeled and diced
1 ¾ tsp Garlic, chopped
10 cups Beef Broth
½ cup Small pasta
½ tsp Oregano
½ tsp Basil
1-can Kidney beans
¼ cup Parmesan Cheese
1 tsp Parsley
1 Onion, diced

In
large saucepan, cook meat over medium heat until brown, breaking up with fork;
drain off fat. Add onion; cook, stirring, for 3 minutes.
Add
carrot, celery, zucchini, tomatoes, potato and garlic; cook stirring, for 3
minutes. Add broth and bring to boil.
Add
pasta, oregano and basil; cook uncovered, until pasta is tender but firm and
vegetables are cooked, 10 to 20 minutes.
Add
kidney beans and simmer until they are heated through. Add Parmesan and parsley; season with salt and pepper to taste.
